Montreal Chicken Roulades
 with Rice


Chicken and Leek Soup


Wilted Spinach Salad with Polenta


Granola

 

1 ½ pounds rolled oats
2 ounces chopped nuts(your choice)
2 cups wheat bran
1 cup coconut
6 ounces vegetable oil
8 ounces honey
1 cup firmly packed brown sugar
2 cups dried fruits, cherries, figs, dates
2 cups raisins

Combine oats, nuts, bran and coconut in a large bowl. In a medium stainless steel sauce pan, stir oil, honey, and sugar over medium heat until sugar is dissolved. Pour warm syrup over oat mixture and toss until mixture is thoroughly coated. Spread mixture evenly onto two oiled half sheet trays. Bake at 300 degrees for 20 minutes, stirring frequently until oats are toasted but not brown. Cool mixture for a few minutes. Turn mixture into a large bowl. Add dried fruits, raisins, etc. to cooling mixture. Continue stirring to break up granola. Store in well sealed plastic containers in your pantry.
