Dear Chef Ruth Ellen,
I love deviled eggs in the summer,
but whenever I boil my eggs the yellows
turn green and my deviled egg filling is
not as bright a yellow as I would like
it to be. How can I keep my eggs from
turning green when I make them. Thanks.

Hi Jackie,
Hard boiled eggs are not boiled, a
culinary mis-hap that still haunts me at
times. Hard "simmered" eggs
would be a better choice of words.
