A Recent Inquiry

Dear Chef Ruth Ellen,

I love deviled eggs in the summer, but whenever I boil my eggs the yellows turn green and my deviled egg filling is not as bright a yellow as I would like it to be. How can I keep my eggs from turning green when I make them. Thanks.

Jackie

Hi Jackie,

Hard boiled eggs are not boiled, a culinary mis-hap that still haunts me at times. Hard "simmered" eggs would be a better choice of words. Keeping the yellows, yellow...it is all in the cooking process. Click here for my  lesson on " Green Eggs and Ham". There you will find a few tips on cooking hard "cooked" eggs the proper way.

Bon Appetit!
