Honey Lemon Dressing
1 whole egg
1 egg yolk
1 small clove garlic minced
1 small shallot minced
16 ounces olive oil
16 ounces vegetable oil
8 ounces honey
lemon juice
salt and white pepper
In a large mixer beat the eggs with the minced garlic
and shallot. Combine the oils. With the whisk at medium
speed slowly, and pour the oils in a stream, slowly add
them to the egg mixture. The mixture will be thick.
Finally, add enough lemon juice to thin the dressing to
a pleasing consistency.
