| Orange Cakes
2 cups flour
2/3 cup sugar
1/2 teasp. baking soda
1 cup buttermilk
2 eggs
2 Tblsp. vegetable oil
2 Tblsp. orange zest
2 cups confectioners sugar
6 Tblsps. orange juice
slivered candy orange peel
Grease and flour 12 large muffin tins, set aside.
Place flour, sugar and baking powder in a mixing bowl.
Whisk buttermilk eggs, oil, and orange zest. Combine
with flour mixture. Bake at 350 degrees for 18-20
minutes. Poke holes in tops of muffins. Cream
confectioner sugar and orange juice. Pour over muffins.
Sprinkle with slivered candied orange peel.
