Meela's Apple Torte

3 pounds Macintosh apples
1/4 cup water
1 cup sugar
1 tsp. vanilla
2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. ground ginger
1/4 tsp. ground cloves

1 box vanilla wafers
1 cup heavy whipping cream
2 Tbsp. Sugar
1 tsp. Vanilla

Peel, core and dice apples. In a sauce pan, place apples, water and sugar. Bring the mixture to a boil, reduce to a simmer and continue to cook until apples are tender. Add the spices. While hot, carefully puree the mixture in blender for just a few seconds. Mixture should be chunky.

In a ten inch spring form pan line the bottom of the pan with a layer of the vanilla wafers. Spread 1/4 of the hot apple puree over the wafers. Add another layer of vanilla wafers, and spread that layer with more puree. Continue this process, until there are four layers. Sprinkle the top layer with nutmeg. Cool the torte in the refrigerator for at least 3 hours, or until set. Serve with sweetened whipped cream.
